Easy-Butternut-Squash-SoupWinter in mid-Michigan is something that I solook forward to early in the season. Cue the Christmas lights and the holiday spirit. Oh look! Pretty giant snowflakes are drifting down. Hey, lets build a snowman and take a walk in the snow-covered field. By the end of January, Im ready to kick cold weather and salt-crusted boots to the curb and welcome spring. But what makes shorter daylight and cold temperatures tolerable is that the month of January has been designated as National Soup Month. Of course you realistically can consume soup all year round but in winter it warms you from the inside out and feels like a nice warm hug. I think of soup as one of the main comfort foods. So in the spirit of We only have a couple more months before the warmth arrives, here are four of my all-time favorite soups and where to get them.
